VINEYARDS
Our grapes are in Notaresco valley in the prime hilly site with outstanding growing conditions where the Montepulciano grapes can shine. This area benefits of a special microclimate and good soil structure due to the high peaks of the Gran Sasso National Park and the Adriatic Coast.
VINIFICATION
Harvest is around 3rd decade September. The grapes are handpicked and put into small 5 kg cases by carefully selecting each bunch. The grapes are left to dry in temperature-controlled tanks especially made for drying the grapes. It normally takes about 120 days during which the grapes gradually become dehydrated and develop the typical fruity aromas of natural drying. After drying, the grapes are dehydrated by about 40%. They are gently pressed and left to undergo a fermenting maceration in steel tanks for 6 months at 25/30°. Fining in American wood for 18 months.
SENSORY FEATURES
Deep ruby red with shades of black plum. The aromas are deep and complex: ripe fruit, raisins, blackberries, sour cherries, cinnamon with touches of vanilla and dark chocolate. The palate has a powerful rush of cocoa powder, with notes of jammy blackcurrant and hints of mocha espresso and caramel toffee. The seamlessly integrated palate of powdery tannins frame the perfect acidity, giving a long texture on the finish.

Its elegance and structure make it perfect with game, red meats or mature cheeses. It is also an ideal accompaniment for lengthy conversations.
